Cucumber salad with Asian red chili vinagrette

Do you remember refrigerator salad with cucumbers? Well this is a grown up one with an Asian flair. So good...I served with bbq chicken skewers and bbq roasted potatoes. A perfect summer fare.

What you need and what to do:

For the dressing mix these ingredients in a small bowl or shake in a jar:

2 tablespoons Thai sweet chili sauce
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 tablespoon sesame oil
1 tablespoon lime juice
1 teaspoon freshly grated ginger
1 garlic clove, minced

3 cucumbers, thinly sliced
1/2 red onion, finely chopped
1 1/2 cup matchstick carrots
1 red bell pepper, chopped

1/2 cup chopped peanuts

Place salad ingredients in a medium sized bowl, add the mixed dressing and toss to coat. Chill 1/2 hour before serving. When ready to serve, toss well. Garnish with chopped peanuts.

The cucumbers will release some of their water as they marinate - so be aware that the vinaigrette will increase the longer they sit. Adapted from Carlsbad Cravings

Happy healthy popsicles

Camp kicks off in TWO DAYS...that means eight kids will be here and their parents. Things have been busy busy to say the least. I want them to be happy and one thing I think kids should have in the summer are popsicles. When. Ever. They. Want. BUT, they have to be healthy. So I bought popsicle bags, BPA free popsicle bags and filled them. Some with just organic fruit and water, some with whole organic milk and yogurt (those pink strawberry banana ones in the front). YUM. 

I made TONS. But that's ok because we will eat what they don't. And you will too.

Here are my combos:
Strawberry banana yogurt
Mango peach banana
Mixed berry banana
Blackberry banana yogurt
Pear and water for the 9 month old twins

The banana makes then nice and smooth. One regular sized blender made from 7-9 depending on how full I make them. Use a funnel for easy filling, tie, freeze, wait for kids to come. Happy summer!
